Pecan Pie Recipe

I love baking and creating new recipes so I decided to post up how to bake one of my favorite pies: Pecan Pie!


First of all you have to have to prepare the pastry for a single-crust pie.

Ingredients
1 1/4 cups all purpose flour
1/4 teaspoon salt
4 to 5 tablespoons cold water
1/3 cup shortening



1.In a bowl stir together the salt and flour. Using a pastry blender, cut in the shortening.
2.Pour one tablespoon of the water over part of the flour mixture. Push moistened dough to the side of the bowl. Repeat until all of the flour mixture is moistened. After the dough is moistened, form the dough into a ball.
3.On a lightly floured surface, use your hands to slightly flatten the dough. Roll the dough out into a circle about 12 inches in diameter.
4.Wrap the dough on a rolling pin to transfer it into a 9 inch pie plate. Carefully put the dough into the plate without stretching the dough.
5.Trim pastry to 1/2 inch beyond the edge of the pie plate. Fold under extra pastry. Crimp edge as desired with fingers or fork. Do not prick the pastry.


Pecan Pie Ingredients
3 slightly beaten eggs
2/3 cup sugar
1 cup corn syrup
1/3 cup of melted butter or margarine
1 1/4 cups pecan halves
1 teaspoon vanilla or vanilla extract


1.Have the pastry ready to be filled
2.For the filling, combine the eggs, corn syrup, sugar, butter, and vanilla. Mix the ingredients well and stir in the pecan halves.
3.Place the pastry-lined pie plate on the oven rack. Carefully pour the filling into the pastry shell.
4.You don't want your pie to be overbrowned, so cover the edge of the pie with doil. Bake in a 350 degree oven or 25 minutes. Remove the foil. Bake for 20 to 25 minutes more or until a knife inserted near the center comes out clean. Cool on a wire rack. Cover and refrigerate within 2 hours. Your pecan pie is ready!!!

I have been reading

I have been so busy with school related things, trying to find a place to live at and other stressful things! Well let's see...what to write about??? Oh I know! Recently, I have been reading a book about the intriguing relationship that Morrissey and Marr had back in the days of The Smiths. The gist of the book is the rise and fall of The Smiths, the lives of Steven Morrissey and Johnny Marr and the differences that tore them apart. I don't really want to mention the name of the book because it has created much controversy and I don't want to bother with all that. At the moment, I am half way through the book. From what I have read, the book is full of irrelevent information and filler. I believe the author does not give justice to the lyrics that Morrissey wrote nor the songs that The Smiths worked hard to create. I sense some jealousy and possibly resentment from the author, partly because his commentary on Morrissey's lyricism tends to be either glancing or completely superficial. The mealy-mouthed preface that accompanies the revised edition of the book is a case in point, and is perhaps better ignored altogether... But before I say more than I should, I will finish the book (although it has its good parts, the ever so addicting book tends to be a chore to read.) and review it then.
